Simple Seeded Loaf


I love cooking bread in the Ninja 15 in 1 Smartlid. The prove function is a game changer and the loaf always comes out crusty and light. This simple seeded loaf is a perfect midweek bake.


Ingredients


400g wholemeal flour

7g yeast

300ml lukewarm water (approx. 36C)

1tsp salt

2 1/2 tbsp olive oil

70g mixed seeds

Butter to grease

250ml water to steam


Method


Mix your flour, yeast, salt and olive oil with the lukewarm water to form into a dough. Kneed for about 3 mins.


Add some parchment paper to the bottom of the Ninja cook and crisp basket and grease the sides with butter.


Add your dough to the basket and prove at 35C for 60 mins.


Deflate the dough and combine the seeds (save some back for the top). Kneed for approx 3 mins.


Place your dough back in the basket and prove again at 35C for 50 mins.


When the loaf has risen, slice across with a knife and sprinkle on the remaining seeds.


Cook on COMBI-STEAM for 20 mins at 180C


Allow to cool slightly then remove from the basket.


Serve warm with lashings of butter.
