STEAM BAKE Chocolate Cake

Cooking cakes in the Ninja Smartlid using the STEAM BAKE feature is a real treat. This recipe was one I leant years ago and is simply called a quick mix cake because you dump all the ingredients in a bowl and stir. I’ve added chocolate to mine but you could make a vanilla cake or scatter some of your favourite dried fruit in. My mum makes an orange and salta a versions which is just delicious.

Ingredients

3 eggs (weigh in their shells)

The same weigh as the eggs of:

Self raising flour

Butter

Caster Sugar

1 tsp baking powder

2 tbsp cocoa powder

Chocolate chunks or drops

Icing sugar to serve

Method

Weigh your 3 eggs in their shell and take a note of the weight.

Add the cracked eggs to a large bowl then weigh out the same amount of your butter, sugar and flour. Place in bowl with eggs.

Add your baking powder, vanilla essence and cocoa powder and mix until all ingredients are combined into a cake batter.

Chop up your chocolate and add to the mix.

Place cake mix in a greased pan.

In your Ninja Smartlid add 250ml water and put the silver rack on the low position. Place your cake pan on top and STEAM BAKE at 160C for 30 mins or until a knife comes out clean.

Leave to cool then remove from the pan, slice and dust with icing sugar. Serve with berries and cream.
