White Chocolate and Raspberry Bread Pudding
If you are a fan of bread pudding this indulgent white chocolate and raspberry version is a must try. Serve warm or leave to cool and enjoy as a treat with a coffee.
Ingredients
6 slices bread (i used leftover white bread but you can use anything, brioche would be nice)
2 Eggs
100ml milk
100ml double cream
50g brown sugar
50g white sugar
1 tsp vanilla essence
1 tsp cinnamon
100g white chocolate
Handful of raspberries
Method
Cut your bread into 2cm cubes. I use scissors as i find it easier.
Create a simple custard by whisking your eggs, cream, milk, white sugar, brown sugar, vanilla essence and cinnamon until combined
Soak your bread cubes in the egg custard mix.
Meanwhile chop some white chocolate and add to bread/custard mix.
Do the same for your raspberries and mix together (I save a few raspberries for the top).
Place your bread pudding mix into a springform tin with some baking paper lining the bottom.
Add the reserved raspberries and gently push down the pudding mix to fill the tin.
Add 500ml to the Ninja Smartlid pot and then place your metal rack inside.
Place the bread pudding tin on top.
Cook on Steam Bake for 30 mins.m
