Marry Me Chicken
You may have heard of this dish as it seems to be taking the internet by storm. Called marry me chicken because anyone who makes it gets marriage proposals its a lovely simple dish to make in your slow cooker. The sun-dried tames and paprika bring a fabulous burst of flavour.
Ingredients
4 Chicken breasts
350ml chicken stock
3 tbsp cornstarch
250ml double cream
squeeze of lazy garlic
1tsp black pepper
1/2 tsp salt
1 tsp mixed herbs
1/2 tsp paprika
2 tsp butter
sun-dried tomatoes
Method
Place the stock In a large bowl and gently whisk in the cornflour a little at a time, making sure to get rid of all the lumps.
Transfer stock/cornflower mixture to your slow cooker. Im using the Ninja Foodi Max but any slow cooker will do.
Add the double cream, squeeze of lazy garlic (you can use fresh as well i’m just lazy), pepper, salt, mixed herbs and paprika. Gently whisk to combine.
Add the chicken breasts and slice up a few sun-dried tomatoes (i used ones from a jar in oil but you can use dried ones just rehydrate in some boiling water beforehand). place the tomatoes on the chicken and top with some pieces of butter.
Cook on HIGH for 4 hours or LOW for 6-7 hours.
Serve with pasta or buttery mash and green vegetables.
