Pressure Cooked Egg and Cress Open Sandwich


If you love a good old Egg and Cress sandwich you’ll love this recipe. I didn’t know you could cook eggs in the pressure cooker but now I won’t do it any other way.


I used the Ninja smartlid for this recipe but and pressure cooker will do.



Ingredients


Eggs

250ml water

bread ( I used seeded sourdough

Mayonaise

Cress

Black pepper

Paprika

Tin Foil


Method


Place 250ml water into your pressure cooker


Place your eggs into the cook and crisp basket and cover with foil ( I only do this incase an egg explodes as I don’t want it to damage the filament in the smart lid).


Add the basket with your eggs into the pot and cook on HIGH for 5 mins with natural Release*


*Set a timer when the natural release starts though and open the valve at 5 mins.


Place your eggs in iced water to cool.


Cut up and butter your bread.


Crush your eggs and mix with the mayonnaise and a good crack of black pepper.


Assemble the open sandwich with bread, then egg mayonnaise, then a sprinkle off paprika and finally a lovely layer of cress.
