Giant Mini Egg Blondie
As Easter approaches I can’t resist a bakes with mini eggs and this giant mini egg blondie is a family favourite. We’ve used the bake function on the Ninja 15 in 1 smartlid but you can also cook these in your airfryer or oven.

Ingredients
250g butter cubed
150g brown sugar
125g caster sugar
2 eggs
1 1/2 tsp vanilla extract
pinch of sea salt
300g plain flour
150g mini eggs
100g white chocolate
Method
Melt the butter in the pot and add both your sugars. heat gently until the sugar has melted and it looks golden brown. Set aside to cool.
In a separate bowl whisk your eggs, vanilla extract and sea salt. Set aside.
Set aside a few mini eggs for the top of your blondie then chop up the rest into pieces (you could do his in a bag smashing with a rolling pin if easier) then break up your white chocolate.
Gently whisk the butter/sugar mixture into the eggs and then add the flour a bit at a time and combine well.
Stir in your chocolate chunks and mini eggs and transfer to a greased pan.
Cook in the smartlid on the BAKE function for 20 mins at 170C. (keep checking as you don’t want the top to burn if its starts to cover with another cake pan).
Meanwhile chop up remaining mini eggs.
Open the ninja and add the remaining mini egg and gently press them into the top of the blondie.
BAKE for another 10-15 mins until the blondie is golden brown and cooked in the middle (keep checking again as you don’t want the top to burn if its starts to cover with another cake pan).
Remove and allow to fully cool before releasing from the pan and eating.
