Air Fryer Mini Quiche
If your fed up of the same lunch everyday bake these mini quiche. Packed full of cheese and fresh chives they are perfect served warm or cold from the fridge.
We used the Ninja Dual Air fryer but you can use any air fryer, here are our favourites.
Ingredients
Short crust pastry - ready rolled
Eggs
Grated cheese
Chopped Chives
Double cream
Salt and pepper
bacon bits
Method
Cut the ready rolled pastry to fit your tartlet cases, Spray each case with fry light and then line with the pastry, trim off the edges.
Spray the bottom of another tartlet tin with fry light and place on top of the pastry (to blind bake).
BAKE/AIRFRY for 10 mins to start the bottom of the target case off. Remove the top cases then BAKE/AIRFRY for a further minute.
Meanwhile whisk eggs, a dash of cream salt and pepper until combined. Chop in plenty of chives and stir.
Once tartlets have finished blind baking, leave in the air fryer and place your grated cheese in the bottom. Add the chive/egg mixture on top.
Bake for a further 8-10 mins until the egg is cooked in the centre. If they look like they are browning to quickly cover.
Once cooked remove from air fryer and allow to cool. Sprinkle with bacon bits, extra chives and a crack of black pepper.
