Loaded Potato Bites
There's no better match to the humble potato than cheese and lots of it. These loaded potato bites are great to serve as a snack, a side or even a main. We used the Ninja Dual air fryer but this will work in any air fryer. Packed full of cheese and dusted with bacon bits these taste absolutely delicious and it’s a great way to use up left over potatoes in your fridge especially y those small ones you don’t want to peel.
We used the Ninja Dual Air fryer but you can use any air fryer, here are our favourites.
Ingredients
5 small potatoes
Knob of butter
Splash of milk
Red leicester cheese grated
Cheddar cheese grated
1/4 red onion finely diced
Bacon bits
Salt and pepper to season
Spring onion and sour cream to serve
Method
Cook your potatoes in the microwave and leave to cool for 20 mins.
Once cool slice the top off each potato and carefully remove the inside and place into a bowl.
To your potato add some butter and a splash of milk and mash. Add the cheeses then salt and pepper to taste.
Finely dice your red onion and add to the potato mixture and combine.
Fill each potato back up with the cheesy mixture and use the inside of your spoon to make a curved top.
Air fry for 5 mins then add a small knob of butter to the top of each one and air fry for another minute.
Scatter each potato with some red leicester cheese and pop back in the air fryer for 1-2 mins until the cheese is melted.
Remove the potatoes and sprinkle your bacon bits on the top.
Serve with sour cream and freshly chopped spring onion.
