Air Fryer Chicken Parm

This recipe is a huge hit with my kids. Chicken breasts coated in a parmesan breadcrumb, topped with marinara sauce and melted mozzarella. All cooked in the air fryer so its super simple.

Ingredients serves 2 (adapt for more people)
For the Chicken:
2 chicken breasts
40g Cornflour
1 egg
100g breadcrumbs
40g parmesan
Sliced mozzarella cheese
Frylight
For the Marinara:
200g Pastatta
1/ tsp each garlic granules, onion granules dried rosemary and dried Italian seasoning
1/2 tbsp balsamic vinegar
Salt and pepper to taste
To serve:
Spaghetti, Linguine, potato wedges, salad etc.
Method
Take some clingfilm and place each chicken breast in-between and flatten using a rolling pin.
Mix the parmesan into your breadcrumbs.
Coat the chicken breasts into the cornflour, then egg then breadcrumbs and transfer to your air fryer and spray with Frylight.
Air Fry at 200C until the chicken reaches a minimum 75C and the breadcrumbs are golden brown (approx. 15 mins). Turn and spray half way through.
In the meantime make the marinara sauce by combining all the ingredients in a pan and heating until it bubbles .
Slice the mozzarella.
Keeping your chicken in the air fryer spoon your marinara sauce over the chicken and top with mozzarella, place back in the air fryer and air fry at 200C until the mozzarella is melted (approx. 3-4 mins)
To serve:
Serve with some form of carbohydrate like pasta or potatoes or enjoy on their own with some salad.
