Air Fry Bang Bang Chicken

If you love crispy chicken this air fried cornflake coated version is a must.
It has the most crunchy coating I’ve ever made and by pairing it with the most amazing Bang Bang sauce it’s a perfect snack or simple tasty meal, ready in under 30 mins.
We used the Ninja Dual Air fryer but you can use any air fryer, here are our favourites.
Ingredients
For the chicken:
2 x large chicken breasts cut into strips
1/2 tsp black pepper
1/2 tsp salt
1 tsp garlic granules
1 tsp paprika
1 tso onion granules
2 eggs
80g cornflakes
For the Bang Bang Sauce:
3 tbsp mayonaise
2 tbsp sweet chilli sauce
2 tbsp sriracha
Method
Mix up your spices and add to 2 x whisked eggs.
Crush the cornflakes in a plastic bag, empty into a bowl and sprinkle on a small amount of paprika.
Add your chicken strips to the egg/spice mixture and then coat in the cornflakes and lay in the air fryer.
Air fry at 200C for 12-14 mins (we use a thermometer to check it has reached 74C) turning half way through.
While your chicken is cooking make the bang bang sauce by mixing your mayonnaise, sweet chilli sauce and sriracha together.
Once cooked drizzle the chicken with the bang bang sauce and serve with rice and a garnish of fresh herbs.
